It’s the most wonderful time of the year…strawberry season! If you’re like us, strawberry season means purchasing flats of local strawberries, a full freezer and an overflowing fridge!  So in searching for new ways to use up some of these insanely delicious berries last summer, I came up with this delicious recipe for a new way to enjoy our berries!

Besides being delicious, these muffins also offer some nutritional benefits. The steel cut oats are a good source of soluble fibre and non-heme iron, and the strawberries provide vitamin C, which as a bonus, helps to aid in the absorption of iron. So get out there to pick up some local strawberries, bake and enjoy!
